Abstract: Dust condenses in the molecular outflows of cool evolved stars, and it plays an important role in driving their stellar winds. The gas-phase chemistry and physical conditions in the envelope determine the dust composition. The rich mineralogy of dust found in AGB winds reflects the large range in these conditions. We discuss the nature of dust that condenses in different environments. We first discuss the global picture in the Galaxy, followed by new results from spectroscopy in other galaxies.
