Abstract: Over the course of approximately ten years, we have adopted, modified and developed two categories of activities for an introductory level astronomy course geared toward non-science majors. One category involves a semester-long project that features simple observations, while the other utilizes shorter hands-on activities to measure and interpret or simulate data related to lesson objectives, with an approximate completion time of a half hour. The onset of the pandemic required a rapid change to fully online instruction, followed by a wide variety of class formats for the Fall 2020 semester. These new instructional modes further required a rapid evaluation, development and modification of activities to maintain engagement levels. This presentation will review some of the activities that were successful in the remote, asynchronous format. These include the assembly of a simple spectrograph, visual analysis of images from the college observatory, and ray tracing. The course has been further supplemented with remote observing sessions. We are in the process of developing some additional activities to be adapted for in-class or remote participation.
